The CHEWMASTER® from CHOCOTECH is a specialized crystallization system designed for chewy candy production. The system continuously pumps the cooked sugar solution to a tempering screw, where the mass is supersaturated, initiating the crystallization process. It then enters a specially designed maturing tank for additional crystallization over a set residence time. The mass is subsequently pumped through the TORNADO®, which uses intense shearing via stator and rotor pins to further enhance crystallization without additional air for non-aerated products. For aerated chewy candies, controlled air is introduced during the shearing process. The CHEWMASTER® ensures efficient and uniform crystallization, maintaining the desired texture and quality of the candy.
