Unlike traditional systems, the Mondotherm features a vertical jacketed vessel where the product moves from the bottom to the top, ensuring there are no entrapped air pockets. The product is continuously scraped to maintain the right viscosity. This design, combined with stainless steel product contact surfaces, ensures high hygienic standards. Furthermore, the unit is mobile with three stainless steel legs, allowing it to be installed flexibly within any processing line without the need for additional platform or wall attachments. The Mondotherm is especially useful in applications involving the processing of fat creams.
