Refrigerated fermentation tank with cold water jacket
In cheese production, ensuring precise control over the fermentation process is crucial for achieving consistent product quality. Manual adjustments and monitoring can be inefficient and prone to errors, especially without automated systems that regulate temperature and timing accurately.

Control fermentation with automated temperature regulation
The refrigerated fermentation tanks by Progema, a brand of Omnia Technologies, are specifically designed for the controlled production and dosing of starter whey. These tanks feature a cold water jacket for effective temperature control, which is crucial for maintaining the desired fermentation conditions. Equipped with a remote PC supervisor program, the system allows for the setting of up to 10 different time-temperature evolution recipes, each configurable with either 10-step or linear temperature decrement modes. The system also provides graphical recording of the actual time-temperature curves for each tank, enabling detailed monitoring and adjustments. Each tank can handle predefined whey transfers to mixers and other processes. The graphical display offers a complete synoptic view of the plant, along with colored graphical trends for the last 24 hours of preparation, ensuring that any issues are quickly identified and resolved. Tanks can be customized in size and grouped into systems managed by PLC automation, or provided as independent units with their own electric panel, touch screen display, and equivalent software used in larger installations.
