The ROTORSTAR from CHOCOTECH is designed for the continuous processing of butter toffee containing sugar, butter, and glucose. This system allows up to 15% of volume in chopped or ground nuts to be incorporated into the toffee mixture before cooking, where nuts achieve a roasted flavor. The mixture can handle nut pieces up to 5 mm in size, and larger nuts can be integrated post-cooking using the SOLLICH SMC mixer. This ensures a fine, snappy texture with the traditional taste of roasted nuts.
