The CARASTAR® by CHOCOTECH is a flexible batch cooker designed to handle various confectionery masses, including caramel, jelly, and sugar solutions. The unit is available in different sizes, with batch capacities ranging from 60 kg to 250 kg and throughput rates of up to 750 kg/h. It stands out due to its versatility in cooking methods, enabling atmospheric, under pressure, under vacuum, post-vacuuming, and cooling processes. For greater automation, it features load cells for automatic ingredient feeding when a batch weigher is unavailable, and a high shear mixer for homogenization. Additional options include a vacuum installation, CIP booster pump, and dairy valving for inline washing using 360° spray balls. The system often incorporates a reservoir tank for continuous downstream processing, making it ideal for large-scale confectionery production.
