Refiner for spreadable cream and chocolate

In small to medium-sized confectionery workshops, achieving a smooth, homogenous consistency in spreadable creams and chocolates can be challenging. Issues like overheating and the preservation of organoleptic qualities are common hurdles during the refining process.

Produce smooth, refined creams and pastes

The Selmi Micron 25 is a ball refiner designed for producing spreadable creams, anhydrous ice cream pastes, pralinated products, and other cream sweets. Equipped with an integrated refrigerator, it regulates excess heat from friction, preserving the product’s organoleptic qualities. A volumetric pump ensures continuous circulation during refinement, and the refining cylinder maintains a stable temperature to prevent fat solidification. With a tank capacity of 20-25 kg and a refining rate of 15-20 kg/h to under 20 microns, the Micron 25 is efficient for small to medium workshops. Electrical specifications are 400 V three phase – 50 Hz, and it can be modified to 220 V. It requires a compressed air source with a minimum of 6 bar pressure and 300 liters per minute flow, filtered, dry, and deoiled.
