Fruit pieces handling for juice production

Processing fruit juices containing pieces or cells requires special care to maintain the integrity of the added fruit matter. Common challenges include avoiding mechanical damage and ensuring homogeneous mixing for consistent quality.

Ensures integrity and homogeneous mixing

The fruit pieces handling technology by A Due S.p.A. is designed to handle fruit juice with pieces (such as orange cells) or chunks (mango, pineapple, etc.), the system ensures minimal mechanical and heat damage while maintaining the flexibility to adapt to various packaging technologies. The system features horizontal batch tanks equipped with slow-turning stirrers that mix the solids in the liquid gently to prevent deterioration. Special simulation and control software like T.I.Be.Na. and Fluent are utilized to optimize the process. The mixers feature double stirrer propellers arranged asymmetrically to avoid sedimentation and integrate a range of sensors and control systems to monitor and maintain the quality of the product. With options for both hot and cold mixing processes, it supports varied production needs, including in-line or tunnel pasteurization for the cold process.

Benefits

  • Maintains the integrity of fruit pieces
  • Flexible packaging compatibility
  • Homogeneous mixing ensured
  • Adapts to hot and cold processes
  • Comprehensive process monitoring
