The Wheat and Spelt Compactline by Diosna is a flexible and compact system designed for the production of all wheat pre-doughs and sourdoughs. This unit features a three-walled stainless steel fermenter with integrated cooling and optional temperature control units for precise temperature management. Equipped with a propeller agitator for the W Compactline and an anchor agitator for the RW Compactline, the system ensures gentle mixing without washing out gluten. Each unit comes with a touch panel for easy operation and programmable process parameters, allowing for reproducible processes. The RW 650 variant also supports rye sourdough production, making it versatile for different baking applications. Diosna offers technological coaching and their DIOStart products to further enhance pre-dough quality and consistency.
