Liquid salt dosage systems for pasta filata-type cheeses
In the production of pasta filata-type cheeses, achieving the correct salt concentration is crucial for taste, texture, and preservation. This process needs precise control of salinity and temperature to ensure consistent quality and safety of the final product.

Ensure precise salt concentration and temperature
The liquid salt dosage systems by GEA provide a solution for the accurate preparation and heating of saline solutions. The system features cylindrical stainless steel tanks with a capacity of up to 800 liters. The salt solution is prepared and then pumped through a titanium plate heat exchanger to reach the desired temperature. The temperature is monitored by a feeler unit and adjusted automatically via a modulating valve for optimal consistency. GEA also offers a two-tank system composed of durable fibreglass-reinforced plastic tanks. In this configuration, up to 1800 liters of saturated salt solution is prepared in the first tank and then pumped to a second tank, where it is diluted to the precise salinity. The heated saline solution is fed to stretching machines, with temperature control maintained by a thermoregulator. These systems are designed to meet high hygienic standards ensuring reliable operation across various cheese production environments.
