The Progema Engineering brine immersion salting system is designed to provide precise and automated cheese salting. This system features stainless steel tanks with a capacity of 20, 25, or 40 cheese forms arranged on five stacked levels. The brine circulates through the tanks, maintaining consistent concentration by passing through a dedicated chiller and multi-tube heat exchanger. Automation is managed through sanitary pneumatic valves and overseen by a PLC with a color touch screen display for controlling all operational parameters. The system also offers optional features such as automatic salinity control via conductivity meter and dissolver, as well as weighing baskets at both entry and exit points with data transfer capabilities for further processing on a PC. This advanced system ensures uniform salting with minimal manual intervention.
