The SELECOMPACT red winemaking tanks, produced and patented by Gimar (Omnia Technologies), offer an innovative and automated solution for the vinification of red wines. These tanks enable the use of advanced technologies within a compact design, allowing for efficient and high-quality wine production. A distinctive feature is the automated cascading pumping over action, which ensures consistent wetting and homogeneous crumbling of the grape marc cap. The integrated OXYCONTROL and OXYPLUS devices manage the oxygen levels in the macerating grape mass, while the THERMOSOFT system regulates temperature to prevent thermal shock. Additionally, the DENSIMATIC system monitors the density of the fermenting must. All functionalities can be managed through a dedicated control panel equipped with a DIGIWINE electronic board, and the setup is compatible with VINISUPERVISION remote control. The ELIMATIC system facilitates wine refinement on the lees with remixed cycles controlled from the panel. Residual solids are removed via a mechanical extractor that can be integrated with screw conveyors. The SELECOMPACT tanks are available in various capacities ranging from 23 to 332 hectoliters.
