Stretching machines for dry and hard cheeses

In the industrial cheese production sector, particularly for producing dry and hard cheeses like dry mozzarella, maintaining optimal stretching and precise pasteurization of cheese curds is crucial. Ensuring reliable and continuous operation while meeting medium-to-high throughput demands poses a challenge.

Ensure consistent cheese stretching and pasteurization

The GEA hot water stretching machines with rotary paddles are specially designed for the production of dry and hard cheeses. These systems feature counter-rotating augers for pre-stretching cheese curds and rotary paddles for the final stretching phase, enabling consistent texture and water content control. The equipment leverages manual micrometric valves to regulate hot water delivery, ensuring both optimal stretching and pasteurization. The augers, paddles, and machine body are Teflon-coated, and some models are available with GEA’s Vulcan non-stick treatment for enhanced durability. The feeding tunnel and mixing vat are designed to prevent clogs and facilitate efficient cleaning, with integrated mechanical and electromechanical safety measures. These stretching systems can handle production capacities ranging from 500 to 6,000 kg/h, making them suitable for medium-to-high industrial-scale operations. GEA also offers remote assistance for PLC-operated machines and provides complete pipework and sprinklers for connection to cleaning-in-place plants.
