Drum molding machine for soft pasta filata cheeses

Producing various soft pasta filata cheeses like mozzarella and provola requires precise molding characteristics. Traditional methods may not ensure consistent shape and weight, posing challenges for maintaining product quality and uniformity, particularly in high-capacity production environments.

Automate spherical and cylindrical cheese molding

The GEA drum molding system is specifically designed for the production of an array of soft pasta filata cheeses, including mozzarella, mozzarella balls, scamorza, and provola. These systems use high-precision electromechanical drives to regulate auger and drum speeds, ensuring consistent pressure and product weight in the forming chamber. The units are versatile, with configuration options for 2, 4, or 6 auger feeders, meeting diverse production requirements. Made from AISI 304 stainless steel, this system includes thermoregulated hot water jackets to maintain the required product temperature, and a feeler unit in the auger chamber for temperature monitoring. The interchangeable aluminum drum molds, equipped with a grooved coupling mechanism, ensure a perfect seal with minimal whey loss. GEA incorporates advanced safety and hygiene features, including mechanical and electromechanical protections in hazardous zones, waterproof electrical control panels, and optional cleaning-in-place functionalities. Additionally, the Teflon-coated surfaces can be upgraded to Vulcan treatment for enhanced durability and resistance.
