The Dough Strip Line PANE PUR from WP Kemper is designed to automate the production of artisan rolls, small breads, and soft wheat dough breads while maintaining the dough’s natural flavors and open crumb structure. Equipped with the ACCURATOR 2.0, it uses sensitive weighing technology to continually record the dough strip weight, ensuring precise portioning and cutting. The integrated dough strip former and S-shaped rollers gently guide the dough, utilizing gravity for minimal stress. The system also includes the SOFT CUT knife for defined cuts and a drop-shaped flour duster to prevent bridging. The CLEAN TEC design facilitates thorough cleaning, reducing downtime. The PANE PUR can process up to 960 kg of dough per hour and can be configured with 1-6 rows, accommodating dough piece weights ranging from 25 to 3,000 grams.
