Water cooker for fresh pasta processing

During fresh pasta production, achieving consistent cooking and maintaining product humidity are crucial. Uneven cooking and fluctuations in temperature can negatively impact product quality, leading to inefficiencies and waste.

Maintain consistent cooking and product humidity

The CF Water Cooker by GEA is designed to provide optimal cooking conditions for fresh pasta. The unit features an isolated tank with heated water, maintained by an external heat exchanger controlled via a PLC. The cooking water recirculates through a pump, distributing it uniformly across the belt with a regulating spray system. Adjustable jets prevent stickiness and ensure temperature uniformity within +/- 1°C across the cooker. The CF Water Cooker offers flexibility with adjustable cooking times, water temperature, and remixing levels. A counter-belt with flights keeps floating products submerged, enhancing cooking efficiency. The structure is designed for easy cleaning, featuring automated multilayer opening, stainless-steel construction, and rinsing ramps. Options are available to reduce water waste and improve product quality with a starch control system and re-use of washing water.

Benefits

  • Consistent cooking temperature across the entire belt
  • Reduced water waste with re-use of washing water
  • High accessibility for easy cleaning
  • Adjustable cooking parameters for optimal results
