Steam stretching equipment for mozzarella production

Producing pasta filata cheese like mozzarella requires precise temperature control and efficient stretching to maintain texture and consistency. Traditional hot water stretching systems often lead to variability and lower yields, posing a significant challenge for cheese processors focused on quality and efficiency.

Improve yields with steam stretching technology

The GEA steam stretching equipment provides an advanced solution for batch production of pasta filata cheeses, including mozzarella, braids, and pizza cheeses. Unlike hot water systems, steam stretching offers increased yield by up to 1%. Steam is injected directly into the curd through automatic pneumatic needle valves, ensuring uniform heating. The cylindrical mixing vat features a hot water jacket for precise temperature regulation. Servo-motor drives guarantee accurate speed control, while stainless steel AISI 304 construction with Teflon-coated components ensures durability and hygiene. The system can process production capacities from 200 kg/h to 1,000 kg/h and can be integrated with various GEA molding units. Safety is enhanced through mechanical and electromechanical protection in hazardous areas, and remote assistance is available for PLC-operated units.
