The Rotating Cabinet from Dohmeyer is a cryogenic batch freezer that utilizes liquefied carbon dioxide (CO2) or liquefied nitrogen (LIN) for discontinuous cooling and freezing. This system ensures even temperature distribution by using a rotating trolley platform, which locks the product trolley in place and rotates it to cool all sides of the product uniformly. The controlled injection of cryogenic gas instantly lowers the cabinet’s internal temperature through the rapid evaporation of the gas, which is the main source of cooling energy. Fans help disperse the gas throughout the cabinet, further ensuring efficient and homogeneous cooling. This technology is particularly beneficial for applications requiring perfectly uniform cooling, such as the production of cured meats, fish, and smoked products. Additionally, it can be used in various food industry processes, including crust freezing before slicing and normal freezing of meat, fish, prepared meals, and bakery items. With standard and customizable cabinet dimensions, this equipment offers flexibility to meet specific production needs.
