The BM 2-40 by WP Haton is an industrial long moulder designed for both pan and hearth bread. It accommodates a wide variety of dough types, including wheat and mixed wheat/rye dough. The machine features gradual sheeting, utilizing two pairs of rollers each with their own drive. This setup allows for progressive sheeting which results in better curling and crumb structure of the dough. Adjustable sheeting rollers, pressure boards, and side guides ensure dough-friendly handling. Additional features include visual control of the sheeting process through side windows, an air drying device on the rollers to prevent dough sticking, and scrapers for continuous cleaning of the sheeting rollers.
