These systems, with production capacities ranging from 100 to 3,000 kg/h, create elongated, overlapping cheese fibers, producing high-quality soft, fresh mozzarella cheeses including balls and braids. GEA’s machines come in both batch and continuous systems to suit different operation scales. Compact units are available for smaller producers and pilot-scale operations up to 200 kg/h, integrating stretching and molding in a single unit. Larger continuous systems feature double-walled feeding tunnels for pre-stretching, accurate speed control through servo-motor drives, and precise hot water delivery using manual micrometer valves. The equipment is constructed with AISI 304 stainless steel and various parts have a Teflon coating or can be treated with GEA’s Vulcan mechanical-chemical treatment for a durable non-stick surface. Additionally, these machines include mechanical and electromechanical protections for operator safety and are designed for easy cleaning to minimize downtime. Remote assistance is possible for PLC-operated units, assuring continuous support from GEA engineers.
