The unit comprises a plug that fits into the kneading chamber of the S300 kneader, a clamp to secure the kneader, and an additional plug for closing the water dosing opening. This configuration prevents the kneader from opening accidentally due to dough swelling. The kneader’s different blade speeds facilitate the movement of viscoelastic dough to ensure even mixing. For non-elastic dough, limiting the mixing space with the plug and clamp above the blades improves the mixing process. The device is essential for testing gluten-free flours from sources like pseudocereals and pulses.
