The GEA FreshPasta Former 2 R540 is a double sheet forming system designed specifically for producing filled ravioli. It reduces the sheet thickness to the desired amount and uses a mould to dose the filling accurately. A forming roller seals the filling between two sheets, and a cutting roller defines the ravioli shape. The system features a double calibrating group with centralized regulation, which ensures precise thickness and filling consistency. It supports various types of fillings, even those with high moisture content or pieces up to 20mm in dimension. The compensating piston maintains constant pressure during the forming phases, ensuring superior filling quality. It is built with a stainless-steel structure for easy cleaning, and the mould change can be completed in just 5 minutes without tools, reducing downtime. The system can achieve a cruising speed of 120-180 hits per minute and a maximum speed of 250 hits per minute, with a sheet width of 540mm and a final product thickness of 0.8-1.6 mm.
