Combination chamber for smoking, cooking, and baking

In modern food production, particularly within meat and meal processing, achieving the perfect balance of flavors and textures while ensuring efficiency and hygiene is crucial. Traditional methods often fall short in maintaining consistent quality and ease of operation, emphasizing the need for advanced solutions.

Optimal smoking, cooking, and baking control

The combination chamber SPM-70 by Spako Food Machinery is a versatile unit tailored to meat, fish, meal, vegan, and snack processing. This chamber features a liquid smoke developer, producing less tar and smoke, making it environmentally friendly and easier to clean. Additionally, the newly introduced Touch Smoke combustion smoke developer is compactly integrated into the door, efficiently using space. This system heats a wood cube on a ceramic plate, creating smoke at a low temperature and recirculating it for optimal utilization. Constructed with durable materials and advanced welding and insulation techniques, the chamber offers options such as fixed wall bars or a wheeled trolley. The controls are user-friendly, with a standard microprocessor or an optional TP-720 color touch screen, which stores multiple programs and simplifies operation. Functions include ripening, drying, smoking, cooking, baking, showering, and rinsing, with an optional dry-wet bulb system to control humidity. The TP-720 controller can connect to a PC for process registration, enhancing operational oversight and data management.
