Precise dough sheet cutting station for bakeries

In large-scale baking operations, achieving uniform and precise cuts of dough shapes is essential for maintaining consistent product quality. Operators face challenges in consistently cutting through dough sheets without compromising efficiency or introducing unnecessary waste.

Cutting consistent dough shapes efficiently

The Thomas L. Green Rotary Cutting Station, by Reading Bakery Systems, is designed to accurately and continuously cut distinct product shapes from a single dough sheet. Featuring an integrated conveyor system, it ensures the dough is pressured against a rotating die assembly to achieve consistent cuts. The pressure on the dough sheet can be adjusted during operation, allowing for precision in every piece. The station’s adjustable gap between the conveyor and die roll accommodates varying dough sheet thicknesses, typically between 0.89 mm (.035 inches) and 1.65 mm (.065 inches). With additional options like integrated scrap removal systems, the station maximizes dough utilization by re-routing scrap dough back to the handling system. Die rolls are available in engraved bronze, coated metals, or plastic cups, catering to versatile production needs. Ensuring operator safety and ease of maintenance, it includes mechanically secured and electronically interlocked guards.
