Prevent premature fermentation in grapes
The Alcryo by Siprem International is a cryogenic continuous pre-treatment system designed for whole grapes, whether red or white. The two-stage system consists of a conveyor and a belt elevator that direct the grapes to the destemmer-crusher system. Cryogenic fluid, specifically liquid carbon dioxide, is injected and distributed along the entire chain. It turns into dry ice upon contact with the atmosphere and then into gas, effectively lowering the grape’s temperature by absorbing thermal energy. The entire unit is insulated to minimize heat re-entry and maintain process integrity. Functional tests on-site have shown tangible temperature reductions between 20-25°C for production flows of up to 10 tonnes per hour, enhancing the efficiency and reliability of the winemaking process.
