The system employs precision knife rollers to make numerous small incisions or optional perforations in the meat, optimizing tenderness and marinade absorption. Height-adjustable knife rollers allow for customizable cutting depths, providing control over the level of tenderness. This technology ensures the muscle fibers remain intact, which is essential for maintaining dimensional stability and improving cooking behavior. The tenderizer is equipped with a swivel infeed and outfeed conveyor for smooth product delivery. High-frequency incisions are achievable through a reduced gap and special toothing of the blades, enhancing the meat’s myosin protein availability for improved water binding characteristics, reducing cook-out, and boosting yields. Optional features include a cuber-insert for perforating shaped meat products. The machine is also designed with high operating safety, and it can be maneuvered on four heavy-load steering rollers, with a parking brake and height adjustment.
