Let’s take Maltodextrin as an example. You’ll need to process your veggies with a high starch content. Then you need to perform a starch hydrolysis so long chains of starch molecules are turned into shorter chains of glucose. That needs to be isolated.

It is then fed in doses into an intermediate chamber under a vacuum, where the product will be dried. Vacuum drying is a good solution because it uses lower temperatures than direct drying methods and can be easily controlled.
